Our olive oil expert, Vito Macrina, constantly checks the olive trees and the fruit to certify that they are healthy and that the techniques used during the various growing phases such as manure spreading and pruning are carried out correctly.


We produce an extra virgin olive oil of the highest quality by pressing the olives using the cold method. Our EVO oil is a prime example of our philosophy which envisages a bond between the territory, traditions and genuineness. We obtain this excellent end product through the interaction of various factors: the human factor
(commitment and respect for our history and for our land), cultural, climatic and environmental factors (sustainability and biodiversity).
Our centuries old olive trees, some dating back to the Magna Grecia era, grow on hilly outcrops above the Gulf of Squillace (in the province of Catanzaro), one of the historical olive growing regions of Italy, in the wonderfully panoramic countryside of Calabria.

On these gentle breezy hill slopes caressed by the warm Mediterranean sun, where sudden changes in temperature are unknown and where the mountain ranges offer protection from fierce winds, the olive trees in our groves make the most of these favourable conditions to continue their natural growing cycle unheeded. The northerly winds, the sea breezes and the untiring work of insects such as bees and mosquitoes and of the birds, are all at work when the trees bloom and enrich the flowers in various ways. Pollen, scents and sea and forest essences come together and are assimilated by the plants and subsequently transferred to the drupes and finally to the oil itself.

It is thus that the extra virgin olive oil of our land, in Calabria, acquires all those aromatic notes and those typical individual traits. It is an oil of middling intensity, with hints of almond and apple and pleasingly spicy. These characteristics, together with the presence of antioxidants and a low acidity level, combine to create a unique extra virgin oil.
