The Carolea olive is the epitome of Calabrian olives. It produces a strong, genuine oil, characteristics that exemplify the people who care for the trees.
This extra virgin olive oil is produced entirely on the hills in the province of Catanzaro, in Calabria.

Its main characteristic is that it contains three times the amount of polyphenols of any other oil.
The oil which comes from this cultivar is notable for its low level of acidity which goes from 0.2 to 0.3 and for its organoleptic characteristics and is thus a high class product.
Colour:
Yellow with leaf green reflections. The bouquet too is truly distinctive and intense and pleasingly fruity. There are hints of almond, artichokes, strawberry tree and grasses.
Taste:

Decisive and elegant, perfectly balanced, a riot of vegetable savours, strong, rich, enhanced by the phenol content which is embodied in the structure. A final impressive mix of long – lasting spicy and vegetable overtones.
